Gluten Free Butter Bean One Pot Pasta

About this recipe:
The perfect dish for minimal fuss and maximum flavour, this easy one-pot pasta dish is packed with all the goodness and protein of creamy butter beans and is combined with juicy tomatoes. Add a dash of heat with a finely sliced chilli, and top the pasta with an optional sprinkle of grated dairy or plant-based cheese for a wonderfully indulgent finish.
You can also make this pasta bake ahead of time, and gently reheat for a quick, hearty midweek meal that’s satisfying and bursting with plant-based flavours.
Equipment:
large saucepan or frying pan
Ingredients:
1 onion
3 garlic cloves
1 red chili, optional
3 tbsp olive oil
400g tin of chopped tomatoes
400g tin of butter beans
250g FREEE Brown Rice Penne
150ml stock or water
1 tsp oregano
1 tsp salt
½ tsp black pepper
oil, for dish
fresh basil
cheese or plant cheese, optional
Method:
- Chop the onion into small pieces and finely dice the garlic. Cut the chili in half lengthways, remove the vein pith and seeds then dice the flesh into small pieces.
- Measure the oil into a saucepan or large frying pan, add the onion, garlic and chili, cover and cook over a gentle heat for 10 minutes.
- Add the chopped tomatoes, butter beans with their liquid, brown rice penne, stock, oregano, salt and pepper.
- Stir to mix, cover and cook gently for 15 minutes.
- Scatter some fresh basil over the top and serve with a bowl of grated cheese.
