How To Use Xanthan Gum

Bread and cake crumb can be strengthened by blending Xanthan Gum with gluten free flour before baking. However, some flours such as FREEE White Bread Flour and FREEE Self Raising White Flour already contain Xanthan Gum. Xanthan Gum is also used to stabilise and thicken some sauces and desserts. Xanthan Gum is made from a sugar created during the fermentation of grain, typically maize, with xanthomonas campestris.

How to Make Low Carb Sauces using Xanthan Gum such as Vegan Gravy

  1. Put 1½ tablespoons of oil into a mixing bowl.
  2. Sieve 1 teaspoon of xanthan gum over the oil and stir into a smooth paste.
  3. Add 500/600ml cold liquid, a spoonful at a time, beating well after each addition.
  4. Pour the sauce into a saucepan and bring to the boil while stirring.


How To Use Xanthan Gum in Baking

  1. For bread mix, 2 teaspoons with 500g FREEE Plain White Flour
  2. For cake mix, ¼ teaspoon with 200g FREEE Plain White Flour
  3. For pastry, mix a pinch with 100g FREEE Plain White Flour
