

Gluten Free Black Forest Chocolate Cupcake Muffins
About this recipe:
These cupcake muffins combine the popular black forest flavours into delicious chocolate and cherry muffins.
Equipment:
12-hole muffin or tart tray, 10 cupcake cases and 2 x mixing bowls
Ingredients:
Chocolate Brownie Cupcake Muffins
100g plain chocolate
75g butter
2 eggs
75g caster sugar
100g cherry jam
75g FREEE Self Raising White Flour
1 tsp water
Topping
10g plain chocolate
125ml mascarpone
2 tbsp cherry jam
10 maraschino cherries
Method:
180ΛC, Fan 160ΛC, 350ΛF, Gas 4
Chocolate Brownie Cupcake Muffins
- Pre-heat the oven.
- Stand the cupcake cases in the holes of a muffin or tart tray.
- Break the chocolate into pieces, add the butter and gently melt together.
- Break the eggs into a bowl, add the sugar and beat well.
- Beat in the jam.
- Add the melted chocolate and beat again.
- Stir in the flour and water.
- Divide the mixture between the prepared cupcake cases.
- Bake for 12-15 minutes.
Topping
- Grate the chocolate onto a plate.
- Put the mascarpone into a bowl, add the jam and stir lightly.
- Spoon the mixture onto the top of the cakes.
- Scatter the prepared chocolate over the cakes.
- Place a cherry on the top of each cake.

I have made these little cakes several times and they never last long. I use a whole tub of mascarpone for the topping and morello cherries for decoration and they taste absolutely gorgeous.

First attempt worked out really well, other than having to bake a bit longer (might be my oven). Lovely texture and very chocolately. Went down well with the glutenless-gluten here!
