

Gluten Free Buckwheat and Date Scones
About this recipe:
These pleasing free from fruity scones are super easy to make and could be your next vegan lunch box or tea time treat.
Equipment:
large baking tray and 2 x mixing bowls
Ingredients:
75g dates
250ml vegan milk
200g FREEE Buckwheat Flour
5 tsp FREEE Baking Powder
3 tbsp soft brown sugar
3 tbsp oil
flour, for dusting
icing sugar, for dusting
oil, for tray
Method:
220ËšC, Fan 200ËšC, 425ËšF, Gas 7
- Pre-heat the oven.
- Rub some oil around the inside of a large baking tray or insert a baking liner.
- Chop the dates into a mixing bowl and add the milk.
- Measure the flour, baking powder and sugar into a bowl, stir to combine and sieve into a mixing bowl.
- Tip the dates and milk into the bowl.
- Add the oil.
- Stir quickly and gently to make a soft, sticky mass of dough.
- Spoon into ten piles of dough on the prepared baking tray.
- Bake for 18-20 minutes.
- Dust lightly with icing sugar before serving.

Very tasty. I made mine without any sugar but doubled the fruit and substituted half the amount of fruit with dried apricots. The baking powder certainly helps them rise a little but not much. I think they are more like cookies. I used skimmed milk too . I find they are a great snack and so healthy too.

Made them with a child, used regular full fat milk. Very fast and easy recipe. They were a bit flat, like cookies, but that’s even more interesting for children to eat. Very good recipe of buckwheat flour!

Love these. Have made a few times. They do come out more like cookies than scones for me- quite flat and the texture but I don’t mind either way as they’re delicious and easy to make.

The scones don't really rise unfortunately so you would need two of them to make a proper scone. I find these recipes use a lot of baking powder which I can taste coming through. I also didn't have an orange so I used lemon instead which gave a nice favour. Overall a nice result but I would tweek.

These scones are delicious, the only problem is that they are very crumbly and difficult to cut and put butter or cream etc on. If you do not need to avoid eggs, it may be worth substituting some of the orange juice/water for an egg maybe?
