Gluten Free Sage and Onion Stuffing Balls
About this recipe:
Everyone loves stuffing balls however you might prefer to stuff a bird or for ease bake your stuffing in an oiled 18x23cm/7×9β oven tray. These gluten free stuffing balls are made with gluten free breadcrumbs which can be made in advance bagged and frozen for using when you make your stuffing. Equipment:
baking tray, kitchen processor (optional) and mixing bowl
Ingredients:
150g gluten free bread
75g small onion, finely diced
100ml boiling water
1 tbsp oil
1 tbsp sage, chopped
1 egg
salt and pepper
oil, for tray
Method:
200°C, Fan 180°C, 400°F, Gas 6
Preparing the Gluten Free Breadcrumbs
- Remove the crusts from the bread, cut the crumb into slices and then into chunks.
- Using your fingers, break the chunks into crumbs and spread them out on a baking tray.
- Cover loosely with a clean tea towel and leave overnight to stale.
- Transfer the crumb to a kitchen processor and pulse lightly to make breadcrumbs.
- If not using immediately the stuffing can be bagged and frozen for up to a month.
To Make Gluten Free Sage and Onion Stuffing Balls
- Bring the breadcrumbs up to room temperature.
- Finely dice the onion and put it into a mixing bowl, pour on the boiling water and leave to stand for 15 minutes.
- Rub some oil around the inside of a baking tray and pre-heat the oven.
- Drain the water from the onion, add it to the mixing bowl and stir to combine.
- Add the oil, sage, egg, salt and pepper and mix together well.
- If not using immediately the stuffing can be bagged and frozen for up to a month.
- Divide the mixture into 12 mounds and roll each into a ball.
- Transfer the stuffing balls to the prepared tray and bake for 30-35 minutes.
- Cooked stuffing balls can be frozen and re-heated from frozen.

These stuffing balls were a great hit with my family. I am also egg free so rather than use the egg I substituted with sweet potato mixed with vegan margarine and added a teaspoon of dried sage as well. They are a different texture to normal stuffing but they were really nice and added to my Christmas dinner this year. Thank you Doves Farm. Easy to make. I used gluten free bread that I make using the gluten free bread machine recipe on the packaging for Doves Farm GF white bread flour.
