Gluten Free Yellow Gram Celery Soup
About this recipe:
This easy to make, hearty, vegan soup has a rich golden colour. For a comforting midweek supper serve it with a slice of Easy Gluten Free Seeded BreadΒ or Gluten Free White Bread Rolls. Any leftover soup can be frozen for another day.
Equipment:
large saucepan, large mixing bowl or jug and stick blender or blender
Ingredients:
1 tbsp oil
1 onion, finely diced
2 celery sticks, finely diced
2 garlic cloves, finely diced
100g FREEE Gram Flour
1.5l water
salt and pepper
Method:
- Put the oil into a large saucepan over a medium heat.
- Finely dice the onion, celery, and garlic, add them to the pan, cover and cook gently for 10 minutes until the vegetables soften without browning.
- Remove the pan from the heat.
- Put the gram flour and water into a large bowl or jug, stir until completely combined.
- Add this to the saucepan and return to a medium heat.
- Simmer gently as the soup cooks and thickens.
- Remove the soup from the heat and using a stick blender or blender pulse the soup into a puree.
- Season with salt and pepper to taste.
