GLUTEN FREE Sponge Mix

Ingredients: sugar, rice flour, potato starch, tapioca starch, maize flour, buckwheat flour, raising agents (mono-calcium phosphate, sodium bicarbonate), thickener (xanthan gum).

Allergy advice: free from gluten, milk and peanut.

Storage: once opened store in cool dry place away from sunlight.

Packaging material: OPP/PE laminate.

just made this sponge for a birthday cake ,really easy to make , smells delicious , has risen well,like the buttercream recipe on the side,cant wait to taste, would like a chocolate version and a chocolate brownie one ,pus a pastry mix too.well done doves farm again.

I am so impressed with this sponge mix. You can barely tell it is a gluten free version. My daughter made cupcakes, which turned out perfectly risen and, in actual fact, turned out better than a normal flour recipe. I would order packets of this if it weren’t out of stock. Hoping some more will be available soon.

Love this mix it rises well and makes light sponge that isn’t too sweet. It’s very versatile too. I’ve just used it to make a variation on a lemon drizzle loaf. In addition to the eggs and oil I added two table spoons of lemon curd, lemon zest, a couple tea spoons lemon juice and some dark chocolate chips. I cooked at recommended temperature but for longer about 50 minutes in a loaf tin. When cooked I poured over lemon juice and then lemon drizzle made of lemon juice and caster sugar. Delicious.

I bought this cake mix for my 7 year old daughter who has recently been diagnosed with coeliac disease and thought we would give it a try. The cake mix is fab and really easy to use. Stays fresh for 3-4 days and as a non coeliac pastry chef with 20+ year experience, I was very pleased, will definitely be using this cake mix again and highly recommended it.

I used the sponge mix to make little buns and added sultanas and vanilla essence. Turned out beautifully. Also you can freeze them.

Never had much luck with gluten-free anything until I tried this mix. Even made vegan you get a light and tasty sponge (and I've rarely had a vegan cake I'd want to eat again), and with eggs and coated in buttercream it's virtually as good as ordinary wheat flour cake. Very impressed!

This makes a proper size cake! As a family with 5 gluten intolerant people I am constantly disappointed by cake mixes wanting a single 7inch sandwich tin! What use if that? This fills 2 deep 7 inch or I use 8 inch sandwich tins or 18 cupcakes. I also make sticky toffee pudding in a large lasagne pyrex with Carnation caramel sauce diluted with oat milk and this mix on top in the microwave for 10 minutes. Never fails - always light and fluffy whether vegan or with eggs. Seems to rise beautifully whether I add cocoa powder ( I do add an extra tablespoon of milk), lemon zest and juice, vanilla essence or chopped crystallised ginger.

My granddaughter has numerous allergies, the worst one being wheat, so I bought this to make her birthday cake. She is very picky with cake and will always usually only eat brownie but she loved this. I also made her and my grandsons melting snowman cupcakes with it for Christmas and they all loved them, she still keeps asking for them now. Even my cake monster hubby gave them a big thumbs up. I bake goodies all the time for my kids and grandkids so I always keep a couple of packs handy so that my little princess won’t feel left out.
