

Gluten Free Buckwheat and Blueberry Breakfast Pancakes
About this recipe:
Put a contemporary twist on an ancient recipe by making these delicious American style Blueberry and Buckwheat Pancakes. Buckwheat, the little-known super grain, dates back thousands of years but has recently been gaining a more mainstream audience. This recipe will make four American style pancakes that are delicious served with any kind of syrup.
Equipment:
frying pan, and jug or mixing bowl
Ingredients:
75g FREEE Buckwheat Flour
1 tsp FREEE Baking Powder
1 egg (or ¾ tbsp FREEE Gram Flour + 1½ tbsp water)
75ml milk (or plant milk)
75g blueberries
oil
agave, maple or golden syrup
Method:
- Put the flour and baking powder into a large bowl or jug and stir to combine.
- Beat in the egg (or gram flour + water) and milk to make a smooth thick batter.
- Stir in the blueberries.
- Put a little oil into a frying pan, roll it around to cover the surface and heat until the pan is nice and hot.
- Pour the batter into the pan to make two 75mm/3” circles and cook on a medium heat.
- When bubbles appear on the surface and the base is golden turn the pancakes over and cook the other side.
- Remove the pancakes and keep them warm while you make two more pancakes.
- Serve warm with syrup of your choice.

Great recipe the best most nutritious i have had in an age. I used buckwheat flour and followed the recipie using chickpea flour but addedan egg yolk and 25ml extra skimmed lactofree milk. Plus a teaspoon of trivia to aid my sweet tooth.Really nice,even the blueberries stayed whole.

This is for the gluten free *Pancakes*, not the buckwheat and blueberry ones above. We didnt have plain flour so used self raising. They're amazing! Lovely light texture! We all love this recipe so much we haven't even tried the plain flour

Just made these and wow so impressed. I used large blueberries and added little more milk and got 7 delicious pancakes at the end. Really yummie.... This is my favourite recipe.. Will try it with a zest of lemon next time as recommended by Amy above.

These pancakes were really tasty. Surprisingly fluffy and light. Just the right amount of blueberries which cook to just the right softness. Made 4 just the right amount for two people. Will definitely make again very easy.

Excellent texture but could be sweeter so i added half a tablespoon of tripke zero stevia. The egg needs to be large or just add a little more milk otherwise batter too thick

These are amazing and a staple in our house! Like other reviewer we serve with plenty of extra fresh blueberries and banana on top and a good dash of maple syrup. I’ve also found adding the zest of a lemon to the batter really lifts the flavour.

Just tried this recipe and very disappointed that mine didn't turn out the same as the picture. Mine look more like blinis, no rise at all and spread far and wide.

these are great with banana too, cooked in coconut oil and some maple syrup drizzled on top. Lovely breakfast treat.
