Gluten Free Brown Bread for Bread Machines
About this recipe:
Follow this recipe to make a great wheat free and gluten free alternative to traditional wheat-based bread. You can use any type of milk, vinegar (including gluten free malt vinegar) or sugar. If your machine does not offer a gluten free bake setting, use the rapid program and high bake setting.

Ingredients:

Medium Loaf (2.4lt pan*) |
Large Loaf (3lt pan*) |
egg whites | 2 | 3 |
milk | 530ml | 730ml |
oil | 6 tbsp | 9 tbsp |
vinegar | 1 tsp | 1½ tsp |
FREEE Brown Bread Flour | 500g | 750g |
sugar | 1 tbsp | 1½ tbsp |
salt | 1 tsp | 1½ tsp |
quick yeast | 2 tsp | 3 tsp |
* fill your pan with water to determine your bread tin capacity.
Method:
- Put the egg whites, milk, oil and vinegar into a bowl and whisk well.
- Pour this into the bread machine pan.
- Add the flour, sugar and salt.
- Sprinkle the yeast on top.
- Check the pan is locked into position and close the lid.
- Select the gluten free bread program if available, alternatively use a basic rapid setting.
- Select the dark crust option if available.
- Start the machine.
- Carefully remove the bread pan from the machine as soon as it has finished baking.
- Tip the bread out of the pan and remove the mixer paddle from the bottom of the loaf.
- Cool the bread on a wire rack.
- For best results wait until the bread is cold before slicing.

My first try yesterday was disappointing. The bread is rubbery and at the same time crumbly. It’s only edible when toasted. Taste is ok. I wouldn’t make it again using the gluten free setting on my machine. May try another setting. May try a different flour and recipe.

I make this bread for my wife and she loves it. It turns out quite well. I mix all the watery ingredients in a bread maker pan and whisk with a whisk and then add the flour on top

I tried this recipe with my very old bread maker and used the quick setting as the machine did not have a gluten free setting. The bread was for my wife who prefers to avoid gluten to help her IBS. The bread tasted nice but was very dense , rather like a cake. I tried the recipe again but this time on a standard white bread setting. The bread rose higher and was looser in consistency. The taste was perfect according to my wife. I would definitely recommend this recipe but you may need to play around with the setting.
