Gluten Free Banana and Chocolate Chip Cupcake Muffins
About this recipe:
A really easy and reliable recipe which is also handy for using up that very ripe banana.
Equipment:
paper cupcake cases, 12-hole muffin tray, mixing bowl and blender.
Ingredients:
100g FREEE Plain White Flour
1 tbsp cocoa
2 tsp FREEE Baking Powder
100g sugar
1 banana
2 eggs
50g oil
75g chocolate chips
1 tsp vanilla extract
Method:
190°C, Fan 170°C, 375°F, Gas 5
- Pre-heat the oven.
- Stand 8 cupcake cases in the holes of a muffin or tart tray.
- Measure the flour, cocoa and baking powder into a bowl, stir to combine and sieve into a mixing bowl.
- Add the sugar and stir again.
- Put the banana, eggs, oil and vanilla extract into a blender and mix to a purée.
- Tip the prepared flour blend into the bowl and mix well.
- Stir in half the chocolate chips.
- Divide mixture between the prepared cupcake cases.
- Scatter the remaining chocolate chips over the top of the cupcake muffins.
- Bake for 15-20 minutes

I baked these earlier today, and have received I a lot of praise from my family, saying how delicious they are :-) My family are used to large muffins, so I doubled the quantities (except for the vanilla extract β just because 1tsp felt right) and used muffin cases instead of cupcake cases. I also copied a couple of the other reviewersβ suggestions: I used FREE self-raising flour and 4 added teaspoons of the same flour instead of baking powder. I also reduced the sugar (using 150g for the doubled quantities instead of 200g).

Made these before work, they're that quick and easy! Used two bananas as needed using up, reduced sugar to 75g as a previous reviewer suggested, and I just beat the liquid ingredients as I don't have a blender. Baked for 15mins and they are perfect!

These worked so well. I baked them with my 3 year old and we had fun making and eating them. I didnβt have any baking powder but I used Freee self raising flour instead and added a couple of extra teaspoons to make up for the baking powder. I was nervous but they were great!

Lovely moist muffins. I used less sugar 75g as the bananas were very ripe and sweet. I also used coca nips on top which was a nice change of texture. as they don't melt like chocolate chips. Very yummy

Really enjoyed these cupcakes but found that although the texture was lovely, there was a slight baking powder aftertaste. Also found I preferred the cupcakes with more bananas and more cocoa than the recipe calls for.

Currently self isolating at home in Scotland & needed a recipe to use up over ripened bananas. I only had gf self raising flour in so substituted it for the plain flour & baking flour and they turned out great. A big hit with my two coeliac kids and the non coeliac one too! I was looking for a muffin recipe to use some over ripe bananas and stumbled across this. I didn't use the Dove Farm products as I live in France and its difficult to get these over here, but I just substituted in alternative GF items and for a first attempt, they were grand. Nice and moist, and they actually held their shape unlike a lot of gf baking which just dissolves into sand! Will definitely make these again.

These are really tasty & a good consistency. I do wonder whether less baking powder might improve the taste even more (but maybe not the rise?!) as there was a slight aftertaste. I will make them again and try less baking powder.
