

Gluten Free Fruit Scones
About this recipe:
Made with FREEE White Bread Flour these fruity scones are made with sultanas although you could use raisins or cranberries instead. For scones made with FREEE Self Raising Flour and Rice Flour see Gluten Free Almond Scones and Gluten Free Rice Flour Scones.
Equipment:
large baking tray and mixing bowl
Ingredients:
225g FREEE White Bread Flour
2 tbsp icing sugar
5 tsp FREEE Baking Powder
200ml milk (or non-dairy milk)
50g sultanas
2 tbsp oil
oil, for tray
flour, for dusting
Method:
200ËšC, Fan 180ËšC, 400ËšF, Gas 6
- Pre-heat the oven.
- Rub some oil around the inside of a large baking tray or insert a baking liner.
- Measure the flour, icing sugar and baking powder into a bowl, stir to combine and sieve into a mixing bowl.
- Add the milk, sultanas and oil and stir until the mix thickens.
- Divide the dough into 9 mounds on the prepared tray.
- Dust the top of each mound with flour and use your fingers to gently form each into a small circle 3cm/1¼” thick.
- Bake for 20-22 minutes until golden brown.

I just made these today and they were delicious! thank you so much for the recipe! I too used a muffin tray. I'll keep them in the oven a little longer next time to brown the tops a bit more and make them with chocolate chips for my 9 year old :)

These are brilliant! Rather more like a Devonshire Split in texture than a crumbly scone, and all the better for it. Much easier than scones or splits and unbelievably fast to make, they don’t have much flavour in themselves, but are perfect with jam and cream. Thank you to other reviewers who suggested a lightly oiled muffin tin, which works well. Like all scones, they don’t keep well, so if not eating them straight away, we find it best to freeze them immediately. Defrost and 10s each in the microwave and they’re as good as fresh.

These taste amazing, Like a previous reviewer I also made them in a muffin tin but I probably didn't need to. I actually subbed chocolate chips for the sultanas - don't do that unless you are a 10 year old in which case you will love it. I will definitely make them again.

Lovely recipe, these turned out great, however I made a couple of tweaks: 1) the dough was far too wet to shape into scones by hand, so I used a lightly oiled muffin tray to drop the batter into, which worked just fine. 2) I added in more fruit (maybe twice the amount)
