

Easy Gluten Free Choc Chip and Pine Nut Cookies
About this recipe:
This classic cookie combo adds pine nuts to the FREEE Choc Chip Cookie Mix to make scrummy vegan biscuits that should suit most people with an allergy to peanuts or tree nuts.
Equipment:
2 x baking trays and large mixing bowl
Ingredients:
1 FREEE Choc Chip Cookie Mix
4 tbsp water
2 tbsp oil
25g pine nuts
oil, for trays
Method:
200°C, Fan 180°C, 400°F, Gas 6
- Pre-heat the oven.
- Rub some oil around the inside of two baking trays or insert a baking liner.
- Empty the choc chip cookie mix into a large mixing bowl.
- Add the water and stir to combine.
- Stir in the oil.
- Divide the mixture into 15 piles of dough and roll each into a ball.
- Transfer the dough balls to the baking trays, spacing them out.
- Sprinkle the pine nuts over the cookies and gently press them into the top of each cookie gently with the palm of your hand.
- Bake for 12-15 minutes.
