Gluten Free Supergrain Hoops and Seed Energy Balls

About this recipe:
Prepared in advance and stored in a tin, energy balls can be grabbed for a quick breakfast on the go, can be popped into a lunch box or provide a real boost to enjoy on your next hike or bike ride.
Equipment:
2 x mixing bowls and food processor
Ingredients:
25g FREEE Organic Supergrain Hoops
2 tbsp coconut, desiccated
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
100g dates, de-stoned
50g tahini
25g coconut oil
Method:
microwave on full power for 60 seconds
- Measure the supergrain hoops, coconut, pumpkin and sunflower seeds into a mixing bowl.
- Chop the dates into a food processor.
- Add the tahini and coconut oil and pulse into a purée.
- Tip the puree into another mixing bowl and microwave on full power for 60 seconds.
- Remove the bowl, add the supergrain hoops and seed mixture and mix well.
- Immediately spoon the mix into 9 tidy piles on a plate.
- Leave to cool.
- Using your hands roll each pile into a ball.
- Store the energy balls in an airtight tin for up to a week.
