Prepared in advance and stored in a tin, energy balls can be grabbed for a quick breakfast on the go, can be popped into a lunch box or provide a real boost to enjoy on your next hike or bike ride.

Equipment:

2 x mixing bowls and food processor

Ingredients:

25g FREEE Organic Supergrain Hoops
2 tbsp coconut, desiccated
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
100g dates, de-stoned
50g tahini
25g coconut oil

Method:

microwave on full power for 60 seconds

  1. Measure the supergrain hoops, coconut, pumpkin and sunflower seeds into a mixing bowl.
  2. Chop the dates into a food processor.
  3. Add the tahini and coconut oil and pulse into a purée.
  4. Tip the puree into another mixing bowl and microwave on full power for 60 seconds.
  5. Remove the bowl, add the supergrain hoops and seed mixture and mix well.
  6. Immediately spoon the mix into 9 tidy piles on a plate.
  7. Leave to cool.
  8. Using your hands roll each pile into a ball.
  9. Store the energy balls in an airtight tin for up to a week.
