Rice flour adds a pleasing crunch to these family favourite cookies. You can use smooth or crunchy peanut butter or a combination of the two. This recipe makes about 24 cookies which will keep best in an airtight tin.

Equipment:

2 x baking trays and 2 x mixing bowls

Ingredients:

175g FREEE Rice Flour
1 tsp FREEE Baking Powder
250g peanut butter
175g soft brown sugar
1 egg
3 tbsp water
oil, for trays

Method:

180°C, Fan 160°C, 350°F, Gas 4

  1. Pre-heat the oven.
  2. Rub some oil around the inside of two baking trays or insert a baking liner.
  3. Measure the flour and baking powder into a bowl and stir to combine.
  4. Put the peanut butter and sugar into another bowl and beat them together.
  5. Beat in the egg and water.
  6. Sieve the prepared flour into the bowl and stir to form a ball of cookie dough.
  7. Take teaspoons of dough rolling each into a small ball.
  8. Place the dough balls on the prepared baking trays and flatten the dough slightly with the back of a fork.
  9. Bake for 15–20 minutes until golden.
  10. Leave to cool on the tray for 5 minutes, then transfer to a rack to cool.  Store cold biscuits in an airtight tin.
