Gluten Free Ginger Oat Biscuits
About this recipe:
Easy to make and bake, these appealing oat biscuits are the ideal treat to keep in your biscuit tin.
Equipment:
large baking tray and mixing bowl
Ingredients:
2 stem ginger in syrup
150g FREEE Brown Bread Flour
50g FREEE Organic Porridge Oats
100g soft brown sugar
1 tsp ground ginger
½ tsp FREEE Bicarbonate of Soda
100g natural yoghurt
4 tbsp oil
oil, for baking tray
Method:
180°C, Fan 160°C, 350°F, Gas 4
- Pre-heat the oven.
- Rub some oil around the inside of a large baking tray.
- Drain the ginger and slice it into fine matchsticks and set aside.
- Put the flour, oats, sugar, ground ginger and bicarbonate of soda into a mixing bowl and stir thoroughly.
- Add the yoghurt and oil and stir to make a soft dough.
- Divide the dough into 16 pieces and roll each into a ball.
- Transfer the balls of dough to the prepared baking tray.
- Put a few of the ginger matchsticks on the top of each dough ball and press down lightly.
- Bake for 25-28 minutes.
- Leave to cool on the tray for 5 minutes then transfer to a rack to cool.
- When cold store in an airtight tin.

I love anything with ginger in it. These our such a treat to have and eat. I freeze mine and take out when I feel like a cookie with my tea. My husband loves them. I use 2 tsp of ginger to ramp up the taste.

I’m new to gluten free eating and so I have been looking for straightforward recipes that I can use for myself and gluten-eating friends. I tried these this morning. They are brilliant! I made 16 with no problems at all. They are crunchy outside with a slightly softer middle which is lovely. I will definitely be keeping this recipe to use again and the only change I will make is to use a little more ginger.

After cooking to the instructions I cooked them for longer at a lower temperature to make them crunchy as they tasted a bit bready beforehand. Much smaller than pictured made about 10 the size of the picture also added much more stem ginger on top.

Very simple recipe to follow. Good taste but I found my biscuits were a lot smaller than the ones pictured so I think next time I would make 8 bigger biscuits rather 16 small ones. Also I think they should mention that you flatten them slightly as mine were still quite spherical post name.
