Gluten Free Gingerbread People
About this recipe:
Get the kids involved with this easy, gluten free recipe which makes 6 large or more smaller gingerbread people. You will find the smell hard to resist whilst baking!
Equipment:
gingerbread people cookie cutter, 2 x large baking trays, 2 x mixing bowls and saucepan
Ingredients:
200g FREEE Plain White Flour
1 tsp ground ginger
Β½ tsp ground cinnamon
Β½ tsp FREEE Xanthan Gum
ΒΌ tsp FREEE Bicarbonate of Soda
75g caster sugar
50g butter
2 tbsp golden syrup
1 egg
butter, for trays
flour, for dusting
writing icing, for decoration
Method:
180°C, Fan 160°C, 350°F, Gas 4
- Measure the flour, ginger, cinnamon, xanthan gum and bicarbonate of soda into a bowl and stir to combine.
- Sieve the flour blend into a large mixing bowl.
- Put the sugar, butter and syrup into a saucepan and heat gently, swirling the pan occasionally until dissolved.
- Pour the saucepan contents onto the prepared flour and stir to combine.
- Add the egg and mix into a sticky dough.
- Cover and chill the dough for an hour or until firm.
- Pre-heat the oven.
- Rub some butter around the inside of into two large baking trays or insert a baking liner.
- Dust the work surface with flour, put the dough in the middle and sprinkle it with more flour.
- Roll out the dough until 7mm/ΒΌβ thick.
- Press the gingerbread people cookie cutter into the dough to cut out the shapes.
- Gently transfer the shapes to the prepared baking trays, leaving plenty of space between each shape.
- Gather left over dough into a ball, roll it out again and cut more shapes.
- Bake for 10-12 minutes.
- Leave to cool on the tray.
- Using writing icing to decorate the cold gingerbread people.

Hi Have just made these gingerbread people today . They turned out really well I was a bit concerned as I had read the other reviews some good some not so good. I didnβt have any plain gf flour so had to use sr flour. I also used a little dark brown sugar with the white and reduced the amount. I beat the egg and didnβt use all of it.. I added couple extra tablespoons of flour wen I mixed it up as it did seem very wet , however I chilled it for a couple of hours, then I rolled it out between 2 sheets of cling film very thinly. I baked them for about 15 mins watching them carefully. We iced them when they were cold . Absolutely delicious, my granddaughter n rest of family loved them.

Super easy recipe making really yummy biscuits! Couldn't even tell that they're gluten free they taste so good. Would recommend adding a little extra ginger/cinnamon. Also, one batch makes a lot more than 6... I doubled the mixture and now have a trillion little gingerbread men

Fab recipe! I did leave it for 24 hours or more to chill (more because I didn't get chance to make and roll out!) I did have to put quite a lot of flour with it to roll out, so if yours is still a little sticky out of the fridge, stick with it! Will be using these to make Christmas cookies too!

Personally think it could do with more flour (very sticky) and more ginger. I also added a bit of ground nutmeg and changed for fruit sugar. They take longer than recipe says to make, as they came out a bit soft initially. Not sure if the recipe seeks softer gingerbread, it doesnt say, and I'm used to ones with a crunch. Very tasty though

Good recipe that doesnβt spread so maintains their shapes. Very sticky to work with so we added more flour. Personally we will add more ginger next time and leave to cook for longer as they didnβt crunch.

Brilliant. I managed to make a good dough, quite sticky to work with though, best to leave them on the baking paper where you cut them out. My daughter loved decorating with currants and best of all they were super tasty for a gluten free recipe!
