About this recipe:
Sometimes called corn starch, Cornflour is a multipurpose thickener which is best for immediate use. Sauces thickened with Cornflour can be difficult to reheat. Â Cornflour is the starchy part of maize which thickens boiling liquid and thickens into an opaque sauce. Â Sauces can also be made with Tapioca Flour, Potato Flour and Xanthan Gum.

Method:
How to Thicken Stews and Gravies with Cornflour
- Mix 2-3 teaspoons of cornflour with 2-3 tablespoons of cold milk or water to make a paste.
- Remove the stew from the heat source.
- Stir about a cup of warm liquid into the cornflour paste.
- Immediately pour everything into the hot item stirring well.
- Return the stew to the heat, allow it to boil, stirring as it cooks and thickens.
How to Make Sauces using Cornflour such as Vanilla Custard and Cheese Sauce
- Mix 3-4 teaspoons of the flour with 3-4 tablespoons of cold liquid taken from a total quantity of 500/600ml.
- Bring the liquid to the boil.
- Remove from the heat.
- Stir in the cornflour paste.
- Return to the heat and stir as it thickens.
- Allow to bubble and cook.
How to Use Cornflour in Baking
- Can be added to strong flour to soften it for cake making.
