These well-known savoury snacks are delicious served warm with plain yoghurt and chutney, stuffed into pitta bread or to accompany curry dishes.

Equipment:

large oven dish, frying pan, kitchen paper and mixing bowl

Ingredients:

75g FREEE Gram Flour
2 tsp cumin seeds
1 tsp ground coriander
1 tsp turmeric
½ tsp salt
½ tsp mixed spice
4 tbsp water
50g potato, grated
100g onion, grated
5 tbsp oil

Method:

  1. Line an oven dish with two sheets of kitchen paper.
  2. Put the gram flour, cumin seeds, coriander, turmeric, salt, mixed spice and water into a mixing bowl and stir to make a paste.
  3. Finely grate the potato and coarsely grate the onion.
  4. Tip them into the bowl and stir thoroughly.
  5. Put the oil into a frying pan over a medium heat.
  6. Take a rounded spoon of the mixture and carefully slide it into the hot pan.
  7. Cook the bhaji, turning it regularly, until golden brown on all sides.
  8. OR, cook bhaji’s in a deep fat fryer according to the manufacturer’s instructions.
  9. Using a slotted spoon, lift the bhaji onto the prepared oven dish and cover to keep warm.
  10. Repeat the cooking process with the remaining bhaji mixture.
