Simple to make these flatbreads can be cooked in a frying pan, on the griddle or even on the mature embers of a BBQ.

Equipment:

BBQ, griddle, skillet or frying pan, tongs, large bowl and jug

Ingredients:

125g FREEE Self Raising White Flour
pinch of salt
25g natural yoghurt
75ml tepid water
25g extra flour for dusting
oil

Method:

  1. Put the flour and salt into a large bowl and blend them together.
  2. Measure the yoghurt and water into a jug, stir to combine.
  3. Pour into the bowl and stir to form a soft dough.
  4. Cut the dough into 4 pieces and roll each into a ball.
  5. Cover with a clean tea towel and rest for 10 minutes or up to 2 hours.
  6. Lightly oil a dry non-stick frying pan or griddle and heat until nice and hot.
  7. Rub a little oil onto your fingers and shape the dough balls into 10cm/4” circles.
  8. Transfer the dough circles to a hot skillet, griddle, frying pan or mature BBQ grill.
  9. Cook as the dough puffs up and the underneath becomes flecked with brown specks, about 1-3 minutes depending on the heat.
  10. Using tongs turn the flatbread over and cook on the other side.
  11. As the flatbreads are cooked, wrap them in a clean tea towel until ready to serve.
