

Gluten Free Flatbread Tortilla Wraps
About this recipe:
Easy to make in a frying pan, these versatile, vegan, flatbreads can be served cold or warm for lunch or supper, with a filling of your choice.
Equipment:
frying pan, jug and mixing bowl
Ingredients:
180ml tepid water
100g FREEE White Bread Flour
1/8 tsp salt
1 tbsp oil
oil, for pan
Method:
- Measure the water into a jug.
- Sieve the flour and salt into a bowl and stir to combine.
- Add a little of the water and stir to make a smooth paste.
- Add the remaining water and oil and leave the mixture to stand for 15-20 minutes.
- Heat a little oil in a frying pan until it is nice and hot.
- Stir the batter then put a large spoon of batter into the pan, smoothing it out to form a circle 15cm/6” in diameter.
- Cook over a medium heat for 2–3 minutes as the surface starts to change colour and the edges start to lift.
- When the base is golden turn the flatbread over and cook the other side for 2-3 minutes.
- Remove the cooked flatbread to a plate and cover with foil to stop it drying out.
- Best eaten on the day of making.

Very quick and easy however as someone mentioned not only do they look like pancakes, they taste like pancakes. I tried a few times and no matter how thin I got the batter, it was still very like a pancake but given I was having them for breakfast with scrambled eggs, they did the job. One I did so thin it was crispy but that meant it wouldn't bend and roll. Still tasted good though. Overall, worth a try and definitely a handy thing to be able to easily do at home.

These remind me a little bit of the authentic corn tortillas my Guatemalan friend makes. The texture is not like the pre-packed wheat tortilla wraps you would buy in the supermarket, it’s softer and more doughy and they come out a bit thicker. They don’t hold up quite so well under liquidy fillings. They are quick, easy and super cheap to make and so long as you know what to expect, they’re perfectly enjoyable. I might suggest adding a little more liquid so that the mixture spreads thinner in the pan but haven’t tried it myself.
