Gluten Free Gram Flour Vegetable Curry
About this recipe:
A traditional style of vegetable curry with gram flour added for flavour, protein and thickening and known as Sabzi Karhi. The tasty vegan curry can be served with plain boiled rice, or Gluten Free Naan Bread.
Equipment:
large frying pan and jug
Ingredients:
100g potato
100g carrot
100g courgette
5 tbsp oil
150g onion
3 garlic cloves
1 red chili
2 tsp ground cumin
2 tsp ground coriander
1 tsp ground fenugreek
425ml water
50g FREEE Gram Flour
2 tbsp lemon juice
Β½ tsp salt
ΒΌ tsp pepper
Method:
- Chop the potato, carrot and courgette into 12mm/½” cubes.
- Put the oil into a large frying pan over a gentle heat.
- Slice the onion into the pan, cover and cook until the onion is translucent.
- Finely dice the garlic and chili and add these to the pan.
- Add the cumin, coriander, fenugreek, stir to combine and cook for a minute.
- Add the prepared vegetables and mix with the onion and spices.
- Pour the water into a jug, add the gram flour, and whisk well.
- Pour into the pan and reduce the heat to low.
- Simmer gently for 8–10 minutes, stirring from time to time, until the vegetables are cooked and starting to collapse.
- Add the lemon juice, season with salt and pepper and stir to combine.

A simple, tasty and filling curry. The gram flour creates a really thick curry sauce. The only thing I did differently was to add fresh chopped coriander before serving. We had it with basmati rice and a chickpea dahl side. Will definitely make again as it's a lovely base for any veg and super healthy too!

First time making this recipe and it was a big hit with myself who is GF and DF, but also my wife and 8 year old daughter who are not. I added chicken and mushrooms into mine and just added more other ingredients to it. Also made the naan breads in the recipe section to go with it ?
