Easy Vegan Drop Scone Pancakes

About this recipe:
A delicious breakfast or tea time treat, these vegan pancakes use one third of a bag of Pancake Mix and chickpea water, known as aquafaba. If you donβt have coconut sugar you could use icing or caster sugar.
Equipment:
jug, frying pan and hand mixer (optional)
Ingredients:
200ml aquafaba
100g FREEE Pancake Mix
2 tsp coconut sugar
oil, for pan
syrup, jam, fruit or seeds, to serve
Method:
- Pour the aquafaba into a jug.
- Add the pancake mix and sugar and beat well until smooth, using a fork or hand mixer.
- Put some oil into a frying pan and get it nice and hot.
- Pour batter into the pan to make 10cm/4” circles.
- Cook on a medium heat until bubbles appear, the top is dry and the base is golden.
- Turn the pancakes over and cook the other side.
- Transfer the pancakes to a plate and repeat with the remaining batter.
- Serve with your choice of syrup, jam, fruit or seeds.
