Gluten Free and Vegan Apple Fritters using Chickpea Flour

About this recipe:
These fruity apple fritters have a light crunchy batter and make a magnificent breakfast or tea time treat when lightly dusted in a little icing sugar. CAUTION: this recipe uses hot oil for frying which can be dangerous so please do not leave unattended.
Equipment:
mixing bowl, frying pan, apple corer (optional), baking tray, plate, kitchen paper and slotted spoon
Ingredients:
Chickpea Flour Batter
75g FREEE Chickpea Flour
½ tsp FREEE Bicarbonate of Soda
125ml water
Apple Fritters
2 apples
oil, for frying
icing sugar
Method:
Chickpea Flour Batter
- Measure the chickpea flour and bicarbonate of soda into a bowl, stir to combine and sieve this into a large mixing bowl.
- Add the water and stir to bring together into a smooth thick paste.
Apple Fritters
- Line a baking tray with a few pieces of kitchen paper and set aside.
- Peel and core the apples.
- Cut the apples into 5cm/¼” thick rings.
- Put some oil in a frying pan over a medium heat.
- Dip an apple ring in the batter, shake off any excess batter and slowly slide it slowly and carefully into the hot pan.
- Cook over a medium heat until the base is golden, about 3-6 minutes depending on the heat.
- Turn the fritters over and cook on the other side, another 3-6 minutes.
- OR cook batter coated apple rings in a deep fat fryer according to the manufacturer’s instructions.
- Carefully remove the cooked apple ring fritters to the paper lined tray, cover and keep warm.
- Repeat with the remaining apple rings.
- Sieve a little icing sugar over the warm fritters and serve.
