We like to serve these super easy, American style pancakes for a breakfast treat.  For vegan pancakes, simply swap the eggs for aquafaba and use a vegan milk.  These fluffy pancakes are best served fresh with your favourite syrup and fresh berries.

Equipment:

non-stick frying pan and mixing bowl

Ingredients:

2 eggs (or 50ml aquafaba)
250ml milk (or vegan milk)
2 tbsp oil
1 FREEE Pancake Mix
2 tbsp caster sugar
oil, for pan
syrup or berries, to serve

Method:

  1. Break the eggs into a mixing bowl, add the milk and beat well.
  2. Or, measure the aquafaba and vegan milk into a bowl and stir.
  3. Stir in the oil.
  4. Add the pancake mix and sugar and beat in to a smooth thick batter.
  5. Rub some oil around the inside of a non-stick frying pan and heat it up.
  6. Pour the batter into the pan to make 8cm/3” circles.
  7. Cook on a medium heat for 3-4 minutes, until the base is golden.
  8. Turn the pancakes over and cook the other side.
  9. Transfer the pancakes to a warm plate.
  10. Repeat with the remaining batter.
  11. Serve immediately with your choice of syrup and berries.
