Easy Gluten Free American Breakfast Pancakes

About this recipe:
We like to serve these super easy, American style pancakes for a breakfast treat. For vegan pancakes, simply swap the eggs for aquafaba and use a vegan milk. These fluffy pancakes are best served fresh with your favourite syrup and fresh berries.
Equipment:
non-stick frying pan and mixing bowl
Ingredients:
2 eggs (or 50ml aquafaba)
250ml milk (or plant milk)
2 tbsp oil
1 FREEE Pancake Mix
2 tbsp caster sugar
oil, for pan
syrup or berries, to serve
Method:
- Break the eggs into a mixing bowl, add the milk and beat well.
- Or, measure the aquafaba and plant milk into a bowl and stir.
- Stir in the oil.
- Add the pancake mix and sugar and beat in to a smooth thick batter.
- Rub some oil around the inside of a non-stick frying pan and heat it up.
- Pour the batter into the pan to make 8cm/3β circles.
- Cook on a medium heat for 3-4 minutes, until the base is golden.
- Turn the pancakes over and cook the other side.
- Transfer the pancakes to a warm plate.
- Repeat with the remaining batter.
- Serve immediately with your choice of syrup and berries.
