Gluten Free American Style Pancakes
About this recipe:
These 10, thick, fluffy, American Style Pancakes are the perfect Sunday brunch treat. They can be made Free From allergens using our clever ingredient swaps. These pancakes are delicious and wholesome topped with banana and chopped almonds, and drizzled with maple syrup.
Equipment:
large frying pan and mixing bowl
Ingredients:
250g FREEE Plain White Flour
2 tbsp icing sugar
1 ¾ tbsp FREEE Baking Powder
2 eggs (or 2 tbsp FREEE Gram Flour + 4 tbsp water)
150ml milk (or plant milk)
50g butter (or plant butter), melted
oil, for frying
sliced banana, chopped almond and maple syrup, optional for serving
Method:
- Put the flour, icing sugar and baking powder into a bowl and stir to combine.
- Break the eggs into a mixing bowl (or measure the gram flour + water into the bowl).
- Add the milk and beat together well.
- Stir in the dry ingredients, then add the melted butter. Beat into a smooth thick batter.
- Put a little oil into a frying pan, roll it around to cover the surface and heat until nice and hot.
- Pour batter into the pan to make 75mm/3” circles and cook on a medium heat.
- When bubbles appear on the surface and the base is golden turn the pancakes over and cook the other side.
- Transfer the cooked pancakes to a plate and repeat with the remaining batter.
- Serve warm with your favourite toppings.

I was out of eggs so used chickpea flour, which is how I always make my GF bread, and it worked well. You have to add more milk as 2 eggs has more liquid than 4 tbsp water. I added sauteed bramley apple to the mixture in the pan and topped with lemon curd after cooking and it made delicious light pancakes!

I used pure olive spread instead of butter. Unfortunately it reacted with the baking powder when I mixed them together. So okay pancakes but not so fluffy.

We loved these GF American-style Pancakes... been looking for something like them for years now. We did exactly as the recipe called for. I like that they say to add the milk to the eggs until they reach 250 grams. We raise our own chickens and our eggs are amazing but usually smaller than the standard egg. So, this was a great fool-proof way to make sure our batter came to the correct consistency. My 4 and 7 year olds L-O-V-E-D them! I felt like I was at home growing up too again!

Excellent recipe. Lovely fluffy American style pancakes. Originally thought the batter was going to be too thick, but when u add the melted butter at the end, the consistency is perfect. Makes 10 as stated. Would definitely make again.

Great recipe! I was looking for an easy pancakes recipe for my allergic son, and this is perfect. I used egg replacer instead of chickpeas flour because I didn’t have it, used oat milk and Stork vegetable baking fat instead of butter and it all worked out well. Delicious pancakes, thank you!

I halved the recipe because it makes quite alot. Perfect pancakes, looked American to me, my 10 year old said they were better than gluten recipe. Had them with bacon and maple syrup. Thankyou so much for this recipe ❤

I liked the pancakes somewhat although they didn’t look like American pancakes. But what was the melted butter for? I wasted 50g as I prepped the ingredients before starting the recipe. Maybe proof read your recipes?
