Gluten Free White Bread Machine Loaf using Egg Whites
About this recipe:
Egg whites are the binder in this pleasing gluten free loaf which is a good alternative to our original Gluten Free White Bread using Whole Eggs.
Equipment:

Ingredients:

Small Loaf (1.9lt pan*) |
Medium Loaf (2.4lt pan*) |
Large Loaf (3lt pan*) |
egg whites | 1Β½ | 2 | 3 |
sugar | 1Β½ tbsp | 2 tbsp | 3 tbsp |
salt | ΒΎ tsp | 1 tsp | 1Β½ tsp |
oil | 4Β½ tbsp | 6 tbsp | 9 tbsp |
vinegar | 1 tsp | 1 tsp | 1Β½ tsp |
tepid water | 215ml | 350ml | 425ml |
FREEE White Bread Flour | 375g | 500g | 750g |
quick yeast | 1Β½ tsp | 2 tsp | 3 tsp |
* fill your pan with water to determine your bread tin capacity.
Method:
- Put the egg whites, sugar, salt, oil, vinegar, and water into a bowl and whisk together well.
- Pour this into the machine bread pan.
- Add the flour and sprinkle the yeast on top.
- Check the pan is locked into position and close the lid.
- Select the gluten free bread program if available, alternatively use the basic rapid setting.
- Select the dark crust option if available.
- Start the machine.
- Carefully remove the bread pan from the machine as soon as it has finished baking.
- Tip the bread out of the pan and remove the mixer paddle from the bottom of the loaf.
- Cool the bread on a wire rack.
- For best results wait until the bread is cold before slicing.

After wasting so much time and money trying to make a decent gluten free bread we had all but given up and resigned ourselves to dense/crumbly/gritty/unappetising shop bought breadβ¦β¦..until I made a loaf in the breadmaker using Freee!!! 1st time making g/f bread in my Russell Hobbs bread maker n g/f setting which is about 8 years old, turned out perfect smells delicious. Just waiting for it to cool so I can taste it, I did add 1 tsp xantham gum.

After a diagnosis to avoid gluten I'd put my bread machine away. This recipe lets me vary my non wheat intake including toast, yippee. I use 1 T of coconut oil for the flavour, sometimes 1t of cinnamon, sometimes a mix of brown with white flour. Feeling freee! Thank you, will experiment more soon

After trying lots of gluten free recipes this one has come out the best. I think using the egg whites and not whole eggs makes a big difference. Really happy to enjoy a lovely crunchy slice of toast again !

This is really good bread. It is so similar to ordinary gluten-loaded bread. After shop-bought bread, this is a revelation. It is nice the first day, and then I portion it up and freeze it, and when I want it I bring it out and toast it. Yum! Recommended.

Superb! I was honestly stunned. I didn't think you could get gluten free bread to look or taste like this - the loaf was golden, well risen, with a delicious crust and an open texture. Glorious. I am SO HAPPY to have found this recipe which I used in a Panasonic bread maker on the gluten free 2hr setting. Now I'm going to try all your other gluten free recipes as I am so delighted. Bread Heaven!

Just to thanks Jane Lowry for saying she made the "hand baked recipe" in her panasonic bread machine and had better results from that. Using the machine bake recipe I've been getting lumps of rock that are quite unpleasant to eat, but that extra 50ml of water made a much better and fluffier loaf of bread. I'll try xantham gum next. Thanks again.

I admit to being very nervous trying out this recipe. An experience a few years ago attempting gluten free bread with a bread machine left me with a dense, unrisen brick - so it was with great trepidation that I added the ingredients and pressed the button on my brand new machine. I shouldn't have been worried - this simple recipe produced the best gluten free bread I have ever eaten (and after 8 years of being gluten free, I've eaten a lot). Light, fluffy, crunchy crust, absolute perfection. Try it!

Just bought a Panasonic bread machine and followed the recipe in your 'Baking Masterclass' booklet using white bread flour - NOT the bread mix. The first result was excellent and tasted good so now will experiment with more of your gluten free bread recipes. I took your advice to slice and freeze the loaf when fresh as after a day the texture becomes more crumbly. Defrosted or frozen slices were delicious toasted.

Well Iβve made this bread and itβs ok but the best results Iβve had and this is strange but true. My first try at baking in my new Panasonic machine was the Dove farm gluten free recipe made by hand!! Yes I added 400ml of water and guess what itβs the best loaf of bread I made, so Iβve stuck to using the non machine recipe and added a teaspoon of xantham gum and itβs a huge fluffy soft loaf ten times better than the machine recipe, so give it a go

After realising I have a gluten intolerance, rather than pay almost $7.00 for a small loaf of of gluten free bread I decided to bake my own with the use of a bread machine. I have tried about 4 Recipes, but this one was the most simplistic and cost effective The bread was softer than all the others and had a satisfying flavour. I decided on the medium loaf to start with and using the egg whites option, I also used 2 tablespoons of honey for sweetener and added approximately 100 gram of black Chia seeds. Not being a baking fanatic this recipe suits me as its quick, simple, tasty, and cost effective.

Excellent recipe. only recently become gluten free to support the wife and as an ex chef I have tried many recipes but this is the best. How about a wholemeal recipe as I found your brown bread recipe rather heavy. Well done.

Recently diagnosed as Coeliac this was my first attempt at GF bread with my new Lidl breadmaker and I'm really pleased with the result. I'd read so many different and seemingly complicated recipes with hard-to-find flours, this one seemed so simple. I would add more salt to my taste, and maybe try it with a little less water next time as the centre is a little heavy compared to the rest of the loaf.
