Egg whites are the binder in this pleasing gluten free loaf which is a good alternative to our original Gluten Free White Bread using Whole Eggs.

Ingredients:

Small Loaf      
(1.9lt pan*)
Medium Loaf  
(2.4lt pan*)
Large Loaf   
(3lt pan*)
egg whites 1½  2 3
sugar 1½ tbsp 2 tbsp 3 tbsp
salt ¾ tsp 1 tsp 1½ tsp
oil 4½ tbsp 6 tbsp 9 tbsp
vinegar 1 tsp 1 tsp 1½ tsp
tepid water 215ml 350ml 425ml
FREEE White Bread Flour   375g 500g 750g
quick yeast 1½ tsp 2 tsp 3 tsp

* fill your pan with water to determine your bread tin capacity.

Method:

  1. Put the egg whites, sugar, salt, oil, vinegar, and water into a bowl and whisk together well.
  2. Pour this into the machine bread pan.
  3. Add the flour and sprinkle the yeast on top.
  4. Check the pan is locked into position and close the lid.
  5. Select the gluten free bread program if available, alternatively use the basic rapid setting.
  6. Select the dark crust option if available. 
  7. Start the machine. 
  8. Carefully remove the bread pan from the machine as soon as it has finished baking.
  9. Tip the bread out of the pan and remove the mixer paddle from the bottom of the loaf.
  10. Cool the bread on a wire rack.
  11. For best results wait until the bread is cold before slicing.
